INGREDIENTS
  • 15 ml (1 tbsp) olive oil
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • 15 ml (1 tbsp) grated fresh ginger (optional, for an energizing touch)
  • 5 large carrots, peeled and cut into slices
  • 2 medium potatoes, peeled and cubed
  • 1 L (4 cups) vegetable broth
  • 125 ml (1/2 cup) coconut milk (or other unsweetened plant-based milk)
  • 15 or 30 g (1 or 2 tbsp) of PURE marine collagen
  • Salt and pepper to taste
  • 2.5 ml (1/2 tsp) turmeric (optional)

PREPARATION
  1. In a large saucepan, heat the oil over medium heat. Sauté the onion for 3-4 minutes until translucent.
  2. Add the garlic and ginger (if using) and cook for another 1 minute, stirring.
  3. Add the carrots and potatoes. Mix to coat well.
  4. Add the broth, bring to a boil, then reduce the heat. Cover and simmer for 25 minutes, or until the vegetables are tender.
  5. Remove from heat. Blend the soup with a stick blender or in a blender until smooth.
  6. Stir in the plant-based milk and collagen. Heat gently without boiling.
  7. Season to taste and serve with a garnish of your choice (e.g., drizzle of olive oil, fresh coriander, or toasted seeds).
