Urban elegance, Japanese energy, and a touch of well-being. Perfect for a chic lunch or a convivial starter.

INGREDIENTS
  • 180 g (6.3 oz) fresh bluefin tuna (sashimi grade), cut into small cubes
  • 1 scoop (10g) of PURE marine collagen
  • 15 ml (1 tbsp) soy sauce or tamari
  • 5 ml (1 tsp) toasted sesame oil
  • 5 ml (1 tsp) lemon or yuzu juice
  • 15 ml (1 tbsp) chopped chives or green onion
  • 5 ml (1 tsp) very finely chopped fresh ginger (optional)
  • 1/2 avocado, diced
  • 5 ml (1 tsp) toasted sesame seeds
  • Freshly ground pepper

PREPARATION
  1. In a bowl, gently mix the tuna with the marine collagen, soy sauce, sesame oil, lemon, chives and ginger.
  2. Add pepper, taste and adjust as needed.
  3. Refrigerate for 10 minutes.
  4. To mold the tartare, place the avocado cubes at the bottom of a cookie cutter then add the tuna mixture.
  5. Remove the cookie cutter.
  6. Garnish with sesame seeds and a drizzle of sesame oil when serving.

PRESENTATION SUGGESTIONS

  • On a toasted nori tile or with black bread croutons.
  • In a verrine or cocktail glass for a sophisticated effect.
  • With a glass of dry sake or cucumber-infused water.
