INGREDIENTS
- 180 g (6.3 oz) fresh bluefin tuna (sashimi grade), cut into small cubes
- 1 scoop (10g) of PURE marine collagen
- 15 ml (1 tbsp) soy sauce or tamari
- 5 ml (1 tsp) toasted sesame oil
- 5 ml (1 tsp) lemon or yuzu juice
- 15 ml (1 tbsp) chopped chives or green onion
- 5 ml (1 tsp) very finely chopped fresh ginger (optional)
- 1/2 avocado, diced
- 5 ml (1 tsp) toasted sesame seeds
- Freshly ground pepper
PREPARATION
- In a bowl, gently mix the tuna with the marine collagen, soy sauce, sesame oil, lemon, chives and ginger.
- Add pepper, taste and adjust as needed.
- Refrigerate for 10 minutes.
- To mold the tartare, place the avocado cubes at the bottom of a cookie cutter then add the tuna mixture.
- Remove the cookie cutter.
- Garnish with sesame seeds and a drizzle of sesame oil when serving.

- On a toasted nori tile or with black bread croutons.
- In a verrine or cocktail glass for a sophisticated effect.
- With a glass of dry sake or cucumber-infused water.
